These turned out great. I used gluten free flour so needed and extra 3/4 cup but you'd never know it was gluten free, maybe a bit lighter and less dense than wheat flour. Very tasty!

i made these for the first time. i make lots of muffins and this one was very wet. i drained the peaches very well and did exactly what it said on recipe. i made mini muffins and made 31. the first 24 overflowed even though i filled them the same as the second lot. the second time, the mixture was a bit thicker on standing and the next 7 came out perfectly. maybe it was the humidity in Auckland, i have no idea but next time i will leave the mixture to thicken a bit.

Easy perfect muffins. I added chunks of cream cheese for extra yum. on a side note - I accidentally used baking powder as well as baking soda and it wasn't noticeable in the end product.
