  • ⅓ cup vegetable oil
  • 1 cup Chelsea Soft Brown Sugar, firmly packed
  • 2 Tbsp Chelsea White Sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 medium zucchinis, grated
  • 1½ cup flour, sifted
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • ¼ tsp ginger
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ tsp salt

Topping

  • ½ cup Chelsea Golden Syrup
  • ¼ cup pepitas

Method

Preheat oven to 180°C (fan-forced 160°C). Lightly grease a large loaf pan.
Place the oil, Chelsea Soft Brown Sugar, Chelsea White Sugar and vanilla in a large mixing bowl and whisk to combine.
Add the eggs and continue whisking to incorporate.
In a separate bowl, place the flour and remaining ingredients and whisk to combine well. Add the zucchini and fold through the flour then add the dry ingredients into the wet ingredients. Gently fold through until just combined.
Place batter into the prepared pan and bake for 50 minutes or until a skewer inserted into the middle of the bread comes out cleanly. Let cool in pan for 10 minutes then remove from pan and place on a cooling rack to cool completely.
To serve, drizzle the Chelsea Golden Syrup over the cake and top with a sprinkle of pepitas.
