Delightfully soft and buttery, these Yo Yo biscuits melt in your mouth. With a creamy filling sandwiched between delicate biscuits, they’re a sweet treat that’s both fun to make and even more fun to eat. Perfect with a cup of tea or coffee.

This is the superior yo-yo recipe. I’ve tried others but these are firm enough not to spread in the oven (with putting them in the fridge first) bit still melt in your mouth. Probably easy to vegan-ise too.

Preheat oven to 180°C bake and line two oven trays with baking paper.
Beat butter and sugar until light and fluffy. Beat in vanilla essence. Sift in flour and custard powder and mix with a spoon or spatula to combine.
Roll heaped teaspoons of mixture into balls and place on prepared trays. Flatten slightly.
Bake for 15 minutes or until biscuits are a pale golden colour. Remove from oven and transfer to a wire rack to cool completely.
Filling
Beat all ingredients together until well combined and smooth. Add a dash of milk if mixture is too thick. Spread onto the base of half the biscuits, then sandwich together with remaining biscuits.
