  • ½ cup water

Method

Blend the watermelon until smooth and transfer to a medium sized metal tin.  Combine Chelsea Caster Sugar, lime juice, zest and water and stir until sugar has dissolved.
Stir the sugar syrup into the watermelon, cover with foil and freeze the mixture for 2 hours.
Remove from the freezer and whip up the ice into shavings with a fork.
Refreeze overnight or until set.
To serve, scrape the granita into icy shavings with a fork and spoon into individual serving glasses.
