  • 1 cup Chelsea Dark Cane Sugar
  • 1 egg
  • 1 tsp vanilla essence
  • ½ cup flour
  • ½ tsp salt
  • ½ tsp mixed spice

  • 1 egg white
  • ¼ cup Chelsea Caster Sugar
  • 1 Tbsp Chelsea Golden Syrup
  • ¼ cup chopped walnuts

Method

Preheat oven to 180°C. Grease and line a square 20cm baking tin with baking paper.
Combine butter and Dark Cane Sugar in a medium saucepan. Stir over medium heat until butter has melted and the mixture is bubbling. Set aside to cool.
Beat egg and vanilla into the Sugar mixture, add flour, salt and mixed spice. Pour into the prepared tin.
Topping : Beat egg white until it holds soft peaks, add Caster Sugar and beat until stiff, beat in the golden syrup and fold in the chopped walnuts. Spread on top of the base mixture.
Bake 30 minutes. Cut into bars when cool.
