  • 2 cups standard flour
  • 2 cups Chelsea White Sugar
  • ¾ cup cocoa
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 eggs
  • 2 tsp vanilla

Chocolate Buttercream Frosting

  • 1 ½ cup soft butter
  • 1 cup cocoa, sifted
  • 5 cups Chelsea Icing Sugar, sifted
  • 2 tbsp milk
  • 2 ½ tsp vanilla

Sugarwork Lava

  • 500g Chelsea Caster Sugar
  • 1 tbsp glucose
  • ½ cup water
  • Orange food colouring

Decoration

  • Dry ice

Method

Preheat oven to 180°C. Grease and line 1 x 16cm & 1 x 20cm tins.
Cakes : Sift flour, Chelsea White Sugar, cocoa, baking powder, baking soda and salt into a big bowl and combine, make a well in centre.
Mix in all wet ingredients in a new bowl thoroughly then add to the dry mixture.
Add 1 cup boiling water, mix well. Separate into the tins. Bake for 30 to 35 minutes with water on bottom to catch the drops if using spring tins.
Cool for 10 minutes in tin then place on a wire rack to cool further.
Chocolate Buttercream Frosting : Beat butter, Chelsea Icing Sugar and cocoa together til creamy. Add vanilla to taste.
Add in the milk to achieve the right consistency.
Sugarwork Lava : Combine all ingredients and heat up until 130-140°C. Add orange food colouring and heat further to 150°C.
Take off heat and cool pot in ice water to stop it from cooking further, then start the sugar work to create lava shapes as desired.
How to assemble: : Once cooled, place the smaller cake layer on top of the larger one. Ice the cakes with the chocolate buttercream and also cover the outside of the cake layers with it.
Place the sugarwork lava on top of the cake and the dry ice in the centre just before presenting to achieve a smoke out effect.
