Pastry

  • 4 ½ cups standard flour
  • 1 ½ tsp salt
  • 300g unsalted butter (chilled and cubed)
  • 12 egg yolks
  • 1 ½ cups Chelsea Caster Sugar

Filling

  • 2 cups fresh/frozen raspberries
  • 2 cups fresh/frozen blueberries
  • 2 cups fresh/frozen blackberries
  • 3 Granny Smith apples
  • 1 cup Chelsea White Sugar
  • 1 tbsp lemon juice
  • 4 tbsp cornflour
  • 2 tbsp butter
  • 1 egg white (beaten)

Method

Preheat oven to 180°C. Prepare a pie dish with parchment paper.
Pastry : Add flour, salt and Chelsea Caster Sugar to a large mixing bowl. Add butter and mix until it comes together.
Gently mold the dough into a ball, then divide it into 2 pieces. Press each piece gently with your hands into a flat disk.
Cover each disk with plastic wrap and put in the freezer to chill; make the filling while this is being chilled.
Filling : Add apples, berries, Chelsea White Sugar and lemon juice to a large saucepan over medium heat. Simmer, until warm and juicy, for about 5 to 10 minutes, gently stirring occasionally.  Stir cornstarch into the juice until smooth.
Bring the pot of berries back to a simmer and slowly pour in the cornstarch. Gently stir mixture (be careful not to mash the berries), until thickened, for about 2 to 5 minutes. Remove from heat and stir in the butter.
Pastry Shell : Gently turn the dough into your pie dish and remove the parchment paper. Settle it smoothly into the bottom and sides of the pan.
Trim and crimp the edges or the crust; blind bake for 10 to 12 minutes.
How to assemble: : Pour the filling into the unbaked pie shell. Use the other piece of pastry dough (prepared earlier) to create a lattice pastry for the top of the pie.
Brush a thin layer of beaten egg white over the top of the pie and sprinkle lightly with Chelsea White Sugar.
Bake at 180°C for approx. 20 minutes. Check it after about 15 minutes and place a piece of tinfoil over it if the top crust is getting too brown.
