Cupcakes

  • 270g butter
  • 2 ¼ cups Chelsea White Sugar
  • 6 tsp vanilla paste
  • 180g sour cream
  • 6 eggs
  • 3 cups flour
  • ¾ cups corn flour
  • 6 tsp baking powder
  • 360g milk

Cream Filling

  • 200g cream cheese
  • 120g Chelsea White Sugar
  • 2 tsp gelatin
  • 2 shots espresso
  • 100ml cream
  • 1 tsp vanilla paste
  • 100g mascarpone
  • 2 egg yolks
  • 40ml coffee liqueur

Coffee

  • 2 shots coffee
  • 60ml coffee liqueur
  • 150g Chelsea White Sugar

Buttercream Icing

  • 1 cup unsalted butter
  • 8 cups Chelsea Icing Sugar
  • 5 tsp coffee liqueur
  • 2 tsp coffee powder
  • 1 cup mascarpone

Decorations

  • Dark chocolate
  • Cocoa powder
  • Coffee beans

Method

Preheat oven to 180°C. Line your muffin tray with cupcake cases.
Cupcakes : Beat butter and Chelsea White Sugar until light in colour and fluffy Add vanilla extract and sour cream and mix until well combined. Add eggs until well combined. Sift dry ingredients in another bowl. Add half of the dry ingredients to the batter and mix until well combined. Add the milk and mix until well combined.
Add remaining dry ingredients and mix until well combined. Fill cupcake liners about half way.
Bake for 15 to 17 minutes or until a toothpick inserted comes out clean.
Remove cupcakes from oven and allow to cool for 2 to 3 minutes.
Cream Filling : Bloom gelatine in a little cold water. Beat cream cheese and Chelsea White Sugar until smooth.
Dissolve gelatine in coffee liqueur. Add to cream cheese. Mix in coffee liqueur and vanilla.
Whip in cream.  Add egg yolk.
Place into a piping bag and chill.
Coffee : Mix coffee liqueur with coffee and Chelsea White sugar.
Put into a squeeze bottle.
Buttercream Icing : Beat butter until soft and add Chelsea Icing Sugar. Beat until white.
Fold in coffee, coffee liqueur and mascarpone.
How to assemble: : Cool cupcakes well. Punch hole in centre of cupcake using a small cookie cutter or melon baller. Squirt in coffee. Fill with cream filling. Pipe buttercream on top. Garnish with chocolate disc and coffee bean. Sprinkle with cocoa.
