Ingredients

Spice Blend

  • ⅓ cup Chelsea Coconut Sugar (50g)
  • 1 Tbsp ground cinnamon
  • 2 tsp ground ginger
  • ½ tsp ground cardamom
  • ½ tsp ground cloves
  • ¼ tsp allspice
  • ⅛ tsp nutmeg

Chai Latte (serves 1, scale up as needed)

  • 1 cup milk of your choice (250ml) (we like coconut milk)
  • 1 English Breakfast tea bag
  • 4 tsp spice blend
  • ½ tsp vanilla essence
  • Ground cinnamon, to garnish

Additional tips

For a caffeine-free drink, choose a decaffeinated English Breakfast tea.

You could use a handheld milk frother to froth the milk instead of blending - strain mixture into a jug, froth, then serve.

For a 'dirty chai', skip the tea and add a shot of espresso instead.

Try an iced chai latte. Do not heat after adding spice blend and vanilla to milk. Add ice cubes to the blender, or simply serve over ice. Delicious topped with whipped cream!

Method

Spice Blend : Place all of the spice blend ingredients in an airtight container or jar, secure with a lid and shake to combine well. Store in the pantry and use as needed. Makes enough for 6 chai lattes.
Chai Latte (serves 1, scale up as needed)
Place milk in a small saucepan on medium heat. Once milk begins to simmer, turn off heat and add the tea bag. Allow to steep for 3-4 minutes.
Remove tea bag and discard. Turn heat back on to medium. Whisk spice blend into milk to dissolve, then stir in vanilla essence. Heat to your desired temperature.
Strain mixture through a fine sieve into a blender. Blend until frothy. Transfer to a mug, sprinkle with a little cinnamon and serve immediately.
