  • 2 cups boiling water
  • 1 packet jelly orange (or lemon) flavour
  • ½ cup Chelsea White Sugar
  • 60 g butter
  • 2 teaspoons baking soda
  • 375g sultanas
  • 3 cups plain flour
  • 3 teaspoons baking powder
  • ½ cup chopped walnuts (optional)

Method

Combine water, jelly crystals and Chelsea White Sugar in a large bowl. Stir to dissolve. Add the butter, baking soda and sultanas. Stir to mix well, cover and leave overnight or at least 8 hours.
Next morning add the rest of the ingredients. Mix well, and pour into one large well-greased and baking-paper-lined loaf tin. Bake for 1 ¼ hours at 180
°C. Cool on a wire rack.
Slice and serve buttered if desired.
