Ingredients

  • 3 tspns vegetable oil
  • 1 red onion finely sliced
  • 1 clove garlic, finely chopped
  • 1 long red chilli, deseeded, chopped*
  • 1 tablespoon yellow mustard seeds
  • 4 fresh mangos, peeled and coarsely chopped**
  • 1 cup apple cider vinegar
  • 1 ¼ cups Chelsea Caster Sugar
  • * For extra hot chutney add 2 long chillies.
  • ** If unavailable, use defrosted frozen mango cheeks.

Method

Heat oil in a saucepan over medium heat. Add onion and cook for 10 minutes or until soft.
Add garlic, chilli and mustard seeds and cook until fragrant (10-20secs).
Add mangos, vinegar and sugar, bring to the boil. Reduce heat to low, simmer for 45-50 minutes or until very thick. Pour into hot sterilised jars. Set aside to cool. Refrigerate for up to 1 month.Makes
5 cups.
