Method

Place Chelsea White Sugar, 1 cup raspberries and lemon juice in food processor or blender and blend until smooth.
Whip up the cream with the Chelsea White Sugar and Kirsch. Fold through the yoghurt.
To assemble boats, spoon 1-2 tablespoons of raspberry sauce into each meringue boat, dollop a spoon of the cream mixture on top.4: Top with remaining raspberries, berries and mint.
