  • ¼ cup Chelsea Raw Sugar
  • ½ cup wholemeal self-raising flour
  • ½ cup rolled oats
  • ¼ cup raisins, finely chopped
  • 2 tbsps oat bran
  • 1 tsp baking powder
  • 2 tsps ground cinnamon
  • 1½ cups buttermilk
  • 2 eggs
  • 1 large apple, peeled, coarsely grated
  • Cooking spray
  • 2 tsp 100% fruit spread, per serve

Method

Put Chelsea Raw Sugar, flour, oats, raisons, oat bran, baking powder and cinnamon in a medium bowl. Stir well to combine. Put buttermilk and eggs in a small bowl and whisk to combine. Add buttermilk mixture to sugar mixture. Add apple and mix until just combined.

Spray a large non-stick frying pan with cooking spray. Heat pan over a medium heat. Add 6 tablespoons of mixture to pan to make 6 pikelets. Cook for 2 mins or until bubbles appear on the surfaces. Carefully turn over pikelets and cook for 1-2 mins or until cooked through. Transfer to plate. Repeat with remaining batter.
Top pikelets with fruit spread to serve.
