Method
Put the passionfruit, lime juice and Chelsea Icing Sugar in a bowl. Whisk until well combined.
Fill a jug about one-third full with ice-cubes. Pour in the passionfruit mixture. Add the mint leaves, raspberries and mineral water. Stir to combine.
Serve!
