Made with brown sugar and golden syrup as this is what I had in the cupboard. Came out nice and soft, but could use more flavour. Would try again with dark cane sugar and more mixed spice and ginger (used 3tsp first time). As I don't use treacle in my baking, I won't bother to buy it to just use 1tbsp. Good recipe, quite mild flavour if you follow quantities exactly.
Preheat oven to 190°C bake / 170°C fan bake. Line a loaf tin (approximately 22cm x 11cm) with baking paper.
In a large microwave-safe bowl or saucepan, melt Tararua Butter and Chelsea Treacle or Chelsea Golden Syrup together. Add Chelsea Dark Cane Sugar or Chelsea Soft Brown Sugar and egg. Mix well.
Add Edmonds Standard Grade Flour, Edmonds Baking Powder, ginger and mixed spice. Stir to combine.
Dissolve Edmonds Baking Soda in Meadow Fresh Original Milk, then stir into mixture.
Pour into prepared loaf tin and bake for 30-40 minutes, or until cooked through (a skewer inserted in the centre should come out clean). Place in tin on a wire rack to cool completely.
ICING (optional) : Whisk together Chelsea Icing Sugar and lemon juice to form a smooth icing. Drizzle over cooled loaf, then sprinkle with crystallised ginger.
This loaf is delicious sliced and spread with butter!
