Louise Cake is one of New Zealand's favourite recipes. A thin layer of shortbread slice, a jam layer and then topped with coconut meringue - YUM!

  • ¾ cup Chelsea White Sugar
  • 1 egg
  • 1 ¾ cups Edmonds Standard Grade Flour
  • 2 tsp Edmonds Baking Powder
  • approx 1 cup raspberry jam

  • 1 cup coconut
  • 1 cup Chelsea White Sugar
  • 1 egg

Method

Cream Tararua Butter and Chelsea White Sugar, then add egg and mix well. Stir in Edmonds Standard Grade Flour and Edmonds Baking Powder. Press into a well greased or paper-lined roasting dish (26 x 30cm at the base) or 2 slice trays. Spread with raspberry jam.
Topping : Mix all topping ingredients together well and then spread over the jam covered base. Bake for 30 - 40 minutes at 165°C. Cool in the tin and cut into pieces.
