  • 2 tsp instant coffee powder
  • 1 ¼ cups hot water
  • ½ cup whisky or fruit juice
  • 175g cooking chocolate
  • 250g unsalted butter
  • 2 cups Chelsea White Sugar
  • 2 cups flour
  • 1 tsp baking soda
  • 2 eggs
  • 1 tsp vanilla essence
  • Chelsea Icing Sugar to dust

Method

Preheat oven to 140°C. Grease and flour a 23cm cake tin.
Put the coffee powder, hot water and whisky/fruit juice into a saucepan and bring to a simmer. Add the broken chocolate and butter and stir until melted.
Add Chelsea White Sugar and stir until it has dissolved. Remove the mixture from the heat and allow to cool.  Sift the flour and baking soda together into a large bowl and make a well in the centre.
In a separate bowl, beat the eggs together with the vanilla and stir into the chocolate mixture.  Pour the chocolate mixture into the well in the dry ingredients and stir to mix.
Pour the mixture into the prepared cake tin. Bake for 1 hour and 20 minutes or until the cake has shrunk from the sides of the tin and is firm to the touch.
Cool in the tin for 20 minutes before turning out onto a wire rack.  Dust with Chelsea Icing Sugar to serve.
