  • 3 cups plain Greek low-fat yogurt
  • 1 cup Chelsea Caster Sugar
  • ¼ cup freshly squeezed lemon juice
  • 2 teaspoons vanilla
  • ⅛ teaspoon salt
  • 2 tablespoons snipped fresh mint
  • Additional to taste pistachio nuts, chocolate chips

Method

In a medium bowl combine the yogurt, Chelsea Caster Sugar, lemon juice, vanilla, and salt. Whisk until smooth.  Add additional extra's if desired: pistachio nuts, chocolate chips.
Freeze the yogurt mixture in an ice cream maker according to the manufacturer's directions. Stir in mint. Transfer to an airtight container and freeze for 2 to 4 hours before serving. Let stand at room temperature for 5 to 15 minutes before serving.
