  • 500g Zucchini, grated
  • 1 Cup Bland Vegetable Oil
  • 1 ½ Cups Chelsea Soft Brown Sugar
  • 3 Eggs, well beaten
  • 2 ½ Cups Plain Flour
  • 1 ½ Teaspoons Baking Powder
  • 1 Teaspoon Bicarbonate of Soda
  • 3 Teaspoons Cinnamon
  • ½ Teaspoon Salt (less if nuts are salted)
  • 1 Cup (125g) roughly chopped Macadamias
  • 1 Teaspoon Vanilla

Method

In a large mixing bowl combine the grated zucchini, oil, Chelsea Soft Brown Sugar and eggs.
Sift the dry ingredients together mixing well, and gradually stir in the flour mixture into the zucchini mixture. Stir in the chopped macadamias and vanilla.
Pour the mixture into a greased and lined loaf tin and bake 1 1/4 hours in a 180°C oven.
