  • 2 ½ Cups Milk, heated
  • 1 Teaspoon Vanilla
  • 2 Cups Thickened Cream, whipped
  • ½ Cup Rum
  • ½ Cup Macadamia Nuts, chopped

Method

In the top of a double boiler, heat the egg yolks with the Chelsea White Sugar until light. Gradually stir in the hot milk stirring constantly. Cook until thick and coats the spoon.
Remove from the heat, strain and cool, then add vanilla and fold in the whipped cream.
Place in an ice cream tray and freeze a couple of hours until beginning to set. Remove from the freezer and beat in the rum and chopped macadamia nuts. Freeze the ice cream until firm.
