  • 250g Butter
  • 250g Chelsea Caster Sugar
  • 125g Self Raising Flour
  • 60g Unsweetened Cocoa Powder
  • 60g Ground Macadamia Nuts
  • 4 Eggs
  • Raspberry and Apricot Jam (see recipe below)
  • 300ml Thickened Cream, whipped
  • Chocolate Shavings

Method

Cream butter and Chelsea Caster Sugar together until light and fluffy.
Mix together flour, cocoa powder and nuts. Add eggs alternately with flour mixture, beating between each addition.
Turn into a greased and floured 23cm springform tin. Cook in oven preheated to 160°C for about 45 minutes or until firm and springy to the touch. Place on rack to cool. Remove springform sides after 5 minutes.
When cool split cake horizontally in two. Spread surface of lower layer with jam. Place top half over jam.
Mound whipped cream over top of cake and sprinkle with chocolate shavings.
