Bright, zesty, and refreshingly tangy, homemade Limoncello is the perfect after-dinner drink. This classic Italian liqueur is easy to make and captures the vibrant essence of fresh lemons. Serve it chilled for a delightful, citrusy kick.

Finely grate the rind of the lemons. Place in a jar and pour over the vodka. Cover and leave a week.
Stir caster sugar into the boiling water. Add the vodka and lemon, cover and leave another week.
Strain into decorative bottles, adding a few fresh strips of lemon peel to each.
