  • 1 Cup Boiling Water
  • 4 Tablespoons Lemon Juice
  • 2 Tablespoons Butter
  • 4 Egg Yolks
  • Pinch of Salt
  • Grated Rind of 1 Lemon
  • 3 Egg Whites

Method

Combine corn flour and 1 cup of Chelsea White Sugar.
Add water slowly, stirring constantly, until thick and smooth. Then add slightly beaten egg yolks, butter, lemon rind and juice and salt.
Cook for 2 to 3 minutes.
Pour into baked shell. Cover with meringue made from the egg whites, beaten stiff and 2 tablespoons Chelsea White Sugar.
Bake in slow oven 15 mins or until light brown.
