Method

Place water, lemon juice and caster sugar in a saucepan. Stir over low heat until sugar dissolves. Increase heat to medium and bring to the boil. Simmer a further 5 minutes or until syrup thickens slightly.
Pour over passionfruit pulp and rind, allow to cool. Strain and pour into sterilised bottles. Store in refrigerator. Enjoy with sparkling mineral water and lots of crushed ice.
