Cinnamon Icing

  • 250ml warm milk
  • 1 tsp yeast
  • 1 tbsp Chelsea White Sugar
  • 3 ½ cups flour
  • 4 tbsp oil
  • 1 tsp salt
  • 1 tsp vanilla
  • 150g clarified butter
  • 5 tbsp til
  • Enough oil for deep frying

To serve

  • Sour Cream
  • Sour Cherry Jam
  • Pistachios

Method

Dissolve yeast and Chelsea White Sugar in milk. Add oil. Mix into flour and salt. Make a soft dough. Rest for 20 minutes. Divide into 4 or 5 pieces. Roll out thinly so you can see through it. It should be at least 80cm across. Brush with melted butter. Roll up on a rolling pin and cut into around 5cm sections. Turn these out on themselves like donut rings and fry for 3 to 5 minutes or until light golden.
Place sour cream on top to decorate and serve with sour cherry jam. Sprinkle with pistachios to decorate.
