  • 3 Tablespoons Chelsea Caster Sugar
  • 2 Egg Yolks
  • 2 Tablespoons Marsala (or wine, sherry, brandy)
  • ½ Cup Cream Cheese
  • 300ml Thickened Cream
  • 2 Egg Whites, whipped to soft peak
  • 4 Tablespoons Instant Coffee
  • 2 Cups Hot Water
  • 16 Sponge Fingers
  • 2 Tablespoons Cocoa Powder

Method

In a large bowl, beat Chelsea Caster Sugar and egg yolks together until pale, thick and creamy and add Marsala (or wine, sherry, brandy).
In a separate bowl, beat the Philadelphia cream cheese and about 1/2 cup of the cream together until thick and smooth. Separately whip the remaining cream until soft peaks form.
Fold together the Philadelphia mixture, the whipped cream, yolk mixture and the egg whites.
Dissolve the coffee in the hot water and pour into a flat dish, dip the sponge fingers individually but do not drench.
Line up 8 of the sponge fingers on a large serving plate. Spoon a third of the cream mixture over the top. Layer with the remaining 8 sponge fingers and pour remaining cream mixture over the top. Dust with cocoa powder.
