  • 26 cups plain flour
  • 4 tbsp baking powder
  • 12 tsp ground ginger
  • 4 tsp mixed spice
  • 2 tsp cardamom
  • 870g butter
  • 3 ¾ cups Chelsea Golden Syrup
  • 7 ½ cups Chelsea White Sugar
  • 3 ¾ tbsp lemon juice
  • 7 eggs, beaten
  • 1 bag boiled lollies

Icing

  • 9 egg whites
  • 12 cups Chelsea Pure Decorating Icing Sugar
  • 3 tbsp corn flour
  • 1 ½ tsp vanilla or lemon flavouring
  • 1 ½ cups warm water
  • Black food colouring

Method

Preheat oven to 170°C. Biscuits
Sift the flour, baking powder, ground ginger, mixed spice and cardamom into a large bowl. In a large saucepan heat butter, Chelsea Golden Syrup and Chelsea White Sugar over a medium heat stirring until the sugar has dissolved. Remove from the heat and cool for 15 minutes then beat in lemon juice and beaten eggs.
Pour the sugar mixture into dry ingredients mix and work into soft pliable dough - (add a few tablespoons of warm water if needed).
Divide mixture, and roll out each piece of dough between 2 sheets of baking paper to a thickness of 2mm.
Bake to 10 to 12 minutes or until golden. Set aside to cool and harden.
Icing : Use an electric mixer to beat Chelsea Pure Decorating Icing Sugar, corn starch, flavouring, and egg whites until the mixture is thick and shiny. Add more Chelsea Pure Decorating Sugar by tablespoonfuls if mixture is too thin.
Add water one tablespoonful at a time if too thick. Add lemon juice and/or vanilla flavouring. Mix well.
How to assemble: : Use the icing to glue the biscuits together to build the tower.
