Method

Preheat grill to a high temperature.
Cut tops from brioches and scoop out centre leaving a 1cm shell. Sprinkle inside of each brioche with Tia Maria.

Place a scoop of ice cream in each brioche and decorate with sugar paper. 

SUGAR PAPER:
To make sugar paper, sprinkle Chelsea Caster Sugar and Chelsea Raw Sugar on an oven tray covered with greased foil. Place under grill and cook until sugar melts to a thin sheet. Watch very carefully as this happens quickly and the sugar burns easily.

Sprinkle with the Chelsea Demerara Sugar before setting aside to cool.
Remove sugar paper from foil and break into pieces.
