Method
Pre-heat oven to 160°C and line two baking trays with baking paper.
Using an electric beater, beat butter and icing sugar until creamy and pale. Sift flour and cornflour over mixture and mix together well.
With lightly floured hands roll mixture into teaspoon size balls, place on baking trays and press lightly with a fork that has been dipped in icing sugar.
Bake for 15 minutes or until cooked through, remove from oven and place on cooling rack.
To make icing, beat butter, icing sugar, lemon or orange zest and juice until smooth.
When biscuits are cold, spread the icing over half one biscuit and top with another biscuit, store in an air tight container.
