  • 1 tsp vanilla extract
  • 2 ½ cups low-fat milk
  • ¼ cup brandy
  • Pinch mixed spice

Method

Put the eggs in a medium bowl with the Chelsea Caster Sugar and vanilla extract. Whisk until well combined. Gradually whisk in the milk.
Transfer the milk mixture to a small saucepan. Heat over medium heat, whisking constantly, until the milk is hot and the mixture starts to thicken slightly.
Remove the pan from the heat and stir in the brandy. Pour between small coffee/tea cups. Sprinkle with a little mixed spice and serve.
