Scones

  • 2 ½ cups self-raising flour
  • 2 tsp Chelsea Caster Sugar
  • ½ tsp mixed spice
  • 3 tbsp unsalted butter
  • 175ml milk
  • 1 egg
  • Orange zest
  • 1 cup dates (soaked overnight in orange juice)
  • 1 egg yolk

Hand Churned Spiced Butter

  • 1 cup butter
  • 3 tbsp honey
  • ½ tsp orange zest
  • ¼ tsp ground cardamom
  • Whipped cream (add vanilla, Chelsea Caster Sugar & pinch of cinnamon)

Method

Preheat oven to 180°C. Line a baking tray with baking paper.
Scones : Sift the flour, Chelsea Caster Sugar and mixed spice and add butter, rub in until the mixture becomes breadcrumb-like.
Mix wet ingredients in another bowl then add to dry ingredients and mix until well combined.
Roll dough onto bench, 5cm thick, cut out moulds.
Brush with egg yolk and dust with Chelsea Caster Sugar. Bake for 10 to 12 minutes, or until golden.
Hand Churned Spiced Butter : Add vanilla, Chelsea Caster Sugar and pinch of cinnamon to cream and whip.
Blend butter, honey, orange zest, cardamom and spiced whipped cream together.
How to serve: : Serve finished scones with the spiced butter.
