The egg whites made the fritters full and fluffy. They were a big hit with the family. Not strong on the corn, quite eggy, and overall bland. Okay with maple syrup., approved=true, user_name=Daniel, hs_createdate=1702249851234, rating_new__1_5_=2, id=11175581741}, {comment_text=Really fluffy. Lovely texture. Reccomend getting the egg white to soft peaks and cooking them as 1 giant pancake. I added 1 red chilli, half a brown onion and 2 cloves of garlic instead of parsley, approved=true, user_name=Andu, hs_createdate=1702249851162, rating_new__1_5_=5, id=11175460628}]}

Method

In a large bowl, mix the cream style sweetcorn, Edmonds Self Raising Flour, Meadow Fresh Low Fat Milk, egg yolks, salt and freshly ground black pepper and parsley together. In a separate bowl, beat the egg whites until stiff and fluffy. Fold these gently into the corn mixture.
Heat the Olivani Pure Olive Oil in a large non stick frypan over medium to high heat. Cook spoonfuls of mixture for approximately 3 minutes each side until puffed up and golden brown. Drain on paper towels. Keep warm in the oven while you cook the remainder of the batch. Serve with chilli sauce, tomato sauce or salsa.
Makes 8-10 large, 20 small.
