Method
Preheat oven to 180°C. Line a 20 x 30 cm sponge-roll tin with tinfoil.
Break the chocolate into pieces and place in the foil-lined tin. Place tin in the oven for 6 - 7 minutes to melt the chocolate. Using a spatula, spread the chocolate evenly around the base of the tin, then leave to cool.
Beat the egg and the sugar then mix in the cherries and coconut. Spoon over the chocolate. Bake for 20 minutes. Cool in the tin then chill in the fridge before cutting into small wedges.
