Method

Preheat oven to 180°C.
Blend the cornflour with a little cold milk until smooth.
In a saucepan, heat the remaining milk until just boiling, add the cornflour mixture and Chelsea White Sugar and stir until mixture thickens.
Remove from the heat and stir in egg yolks until well combined.
Add the butter, vanilla, lemon juice and coconut and mix well.
Pour filling into baked pastry shell and cook in a moderate oven for 10-15 minutes or until set.
