  • 200g Chocolate Melts
  • ½ Cup Boiling Water
  • 1 Tablespoon Rum
  • ¼ Cup Chopped Raisins
  • 2 Eggs, separated
  • ½ Cup Thickened Cream

Method

Place Chelsea Caster Sugar, chocolate melts, water, rum, raisins and egg yolks in a food processor or blender and process until smooth.
Beat cream until thick, fold through chocolate mixture.
Place egg whites in a mixing bowl and beat until stiff peaks form, then fold through chocolate mixture.
Pour mixture into four individual serving glasses and refrigerate until required.
