Very easy to put together. Nice flavour and cakey rather than biscuity. Well worth a try!
Preheat oven to 175°C. Grease and line a rectangular slice tin (19cm x 29cm). Make sure the baking paper lining extends above the height of the tin.
Combine butter, Chelsea Soft Brown Sugar, egg, vanilla and raisins in a bowl. Sift in flour, baking powder and cocoa, stir well. Spread mixture evenly into prepared tin and bake for approximately 20 minutes or until firm.
Remove from oven and spread with icing while the slice is still hot. Allow to cool before cutting - slice should be a chewy texture once cooled.
Icing : Measure Chelsea Chocolate Icing Sugar into a bowl, add in butter and hot water, mix well until smooth. Icing should spread easily. If too thick add a little more hot water to allow it to spread well.
