Ingredients

CRUST

  • 2 cups of Graham cracker crumbs, finely ground (or a suitable plain/digestive biscuit for base)
  • 4 Tbs Chelsea White Sugar
  • ¼ cup butter, melted

FOR CAKE

  • 4 to 8 ounces cream cheese softened
  • 1 ⅓ cups of Chelsea White Sugar
  • 5 large eggs
  • 1 Tbs vanilla essence

FOR TOPPING

  • 5 Tbs Chelsea White Sugar
  • 2 cups sour cream
  • 1 tsp vanilla essence
  • melted chocolate for design (optional)

Method

Preheat oven to 180°C (350°F).
Crush the Graham crackers in a food processor until very fine. Add butter and sugar and mix well.
Pour the mixture into a 9-inch spring-form pan and press into the bottom of the pan. Bake the crust for 8-10 minutes. Remove pan from oven and set aside to cool.
In a bowl, beat cream cheese sugar, vanilla and eggs. Pour the mixture into the pan until it is ¾ full. Bake for about 60 minutes or until center is firm. Remove cheesecake from oven to cool for 10 minutes.
Combine sugar, sour cream and vanilla for topping. After the cheesecake has cooled for 10 minutes spread over top. Return to the oven for an additional 5 to 10 minutes, or until topping is set.
Melt some chocolate in a double boiler. (this step is optional)
Pour the melted chocolate over the cake to make a decoration. Eg you could draw a star, heart or some fun squiggles.
Put the cake into the refrigerator until the chocolate solidifies and the cake has set (about 2 hours). Finally, remove cake from spring from pan and ENJOY!!!
