  • 4 Individual Cheesecakes (pre-made)
  • 310g Canned Mandarin Segments, drained

Liqueur Sauce

  • 30g Butter
  • 3 Tablespoons Chelsea Soft Brown Sugar
  • 1 Teaspoon Grated Orange Rind
  • 1 ½ Cups Orange Juice
  • 2 Tablespoons Cointreau or any Orange Liqueur
  • 2 Tablespoons Cornflour blended with 2 Teaspoons Water

Method

Place cheesecakes on individual serving plates.
Divide mandarin segments into four equal quantities and arrange on top of cheesecakes. Refrigerate until required.SAUCE:
Melt butter in a saucepan, stir in Chelsea Soft Brown Sugar and cook over a low heat, stirring until sugar dissolves.
Add orange rind, orange juice and Cointreau and stir over a medium heat until sauce is smooth. Bring to the boil and boil until sauce reduces by one-third.
Stir in cornflour mixture, cook over a high heat until sauce boils and thickens.
Spoon sauce around bases of cheesecakes and serve immediately.
