Ingredients

Base Pastry

  • 500g flour
  • 100g Chelsea Icing Sugar (sifted)
  • 250g cubed butter
  • Zest of 1 lemon
  • 2 large eggs (beaten)
  • 1 splash of milk

Pastry top

  • ¾ cup iced water
  • 1 tsp white vinegar
  • 3 ¾ cups flour
  • ¼ cup cornflour
  • 3 tbsp Chelsea White Sugar
  • 18 tbsp butter

Blackberry Filling

  • 3 to 4 large apples
  • 2 cups blackberries
  • 1 cup Chelsea White Sugar
  • 100ml kombucha
  • Cornflour to thicken
  • Bunch of basil
  • Vanilla paste

Custard

  • ½ cup milk
  • ½ cup cream
  • Pinch of salt
  • Vanilla paste
  • 3 egg yolks
  • ¼ cup Chelsea White Sugar
  • 2 tbsp cornflour
  • Zest of 1 lemon

Method

Preheat oven to 180°C. Prepare a round baking tin, lined with baking paper, along with some baking beads.
Base Pastry : Combine flour and Chelsea Icing Sugar, and rub butter into this mixture. Add the remaining ingredients and mix quickly.
Press with baking paper and beads to bake for 25 to 30 minutes or until golden brown.
Pastry Top : Chill water and vinegar. Dice up the butter and set aside to chill. Mix flour, cornflour and Chelsea White Sugar using a food processor.
Add the chilled liquid mix and butter to this mixture.  Once combined well, put in the freezer to chill.
Blackberry Filling : Peel apples. Cook apples with blackberries, kombucha and Chelsea White Sugar. Add basil and vaillna.
Thicken the mixture with cornflour and set aside to cool.
Custard : Heat milk and cream with lemon zest. Mix in yolks, Chelsea White Sugar and cornflour. When the milk mixture is hot, mix a little into the yolk mixture, then add this to the milk mixture. Return to heat and stir until thickened.
Strain and cool. How to assemble:
Place ring in centre of pie. Fill with custard. Surround with berry mixture.
