  • 500g Skirt Steak
  • 2 Large Onions
  • 1 Clove Garlic
  • 2 Tablespoons Plain Flour
  • 6-8 Pickled Walnuts
  • 1 Tablespoon Tomato Paste
  • 1 Bay Leaf
  • 1 Tablesoon Salt
  • 1 Teaspoon Chelsea White Sugar
  • 1 Teaspoon Worcestershire Sauce
  • 1 ½ Cups Beef Stock
  • 1 Small Glass Sherry
  • Chopped parsley to serve (optional)

Method

Cut steak in 2cm squares, roll in flour and brown in butter. Remove browned meat and put in a casserole dish with the onions, crushed garlic, tomato paste, Chelsea White Sugar, bay leaf and stock, seasoning well. Cover and cook slowly for 1 1/4 hours.
Add the pickled walnuts, chopped roughly and the sherry and cook another 1/2 hour until meat is tender. Serve with rice and chopped parsley (optional).
