Ingredients

  • 1 cup rolled oats or porridge ground oatmeal
  • 1 cup flour
  • ¼ cup Chelsea Soft Brown Sugar, firmly packed
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¾ cup yoghurt (plain, natural yoghurt)
  • ¾ cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 ripe bananas, mashed
  • 1 cup raisins
  • 50g butter, melted
  • For cooking - oil and a little extra melted butter

Method

Place all ingredients in a food processor and run machine until the mixture is blended and just smooth. Don't over process and chop all the raisins up. Pour into a jug. Heat a non-stick frypan over medium heat. Brush the surface with a mixture of oil and melted butter and cook hotcakes, 2 or 3 at a time, until bubbles appear on the surface and the bottoms are golden brown. Turn over and cook for 2 minutes on the other side. Serve in a stack with a syrup or sauce poured over the top.
