  • 200g sweet biscuits
  • 60g walnuts
  • 70g butter, melted
  • 500g cream cheese, cubed and softened
  • ¾ cup Chelsea Caster Sugar
  • 1 cup sour cream
  • 1 tsp finely grated lemon rind
  • 3 extra large eggs
  • 1 tsp vanilla extract
  • Cream, seasonal fruits, berry coulis, for serving

Method

Preheat oven to 160°C (140°C fan-forced). Grease and line the base and sides of a 22cm cheesecake tin with removable base.
Place biscuits and walnuts in a food processor and pulse until fine crumbs are formed. Remove to a bowl and mix in the butter. Press into prepared pan and cook for 10 minutes, cool.
Place cream cheese, Chelsea Caster Sugar, sour cream and lemon rind into the bowl of an electric mixer. Beat until smooth. Add eggs one at a time until well incorporated. Add vanilla, mixing well.
Pour mixture over biscuit base and bake for 45 minutes. Turn oven off and allow cheesecake to cool in the oven. Once cooled, decorate as desired and serve.
