Try this delightfully tasty and very moist apricot loaf, delicious by itself or with a little bit of butter. You'll be popular if this is put into lunch boxes as well. Thanks to Terry and Kay Hall for the recipe.

  • 1 Tbsp of honey
  • 1 cup of self-raising flour

Method

Combine milk, all bran, brown sugar, chopped apricots, and honey in a bowl and cover, stand overnight in fridge.
Next day add sifted flour and mix well.
Grease an 8x4 tin and sprinkle with flour (this works well), spoon the mixture evenly into the tin bake moderate oven 150 - 160°C for 1 hour.
