  • 6 Slices Stale Sponge Cake
  • 2 Tablespoons Brandy
  • 2 Tablespoons chopped nuts
  • 300ml prepared Vanilla Custard
  • 2 Egg Whites
  • 2 Tablespoons Cornflour
  • 1 cup prepared apple puree
  • 2 Tablespoons Chelsea Caster Sugar
  • 2 Tablespoons chopped nuts for decoration

Method

Place sponge cake in serving dish. Sprinkle brandy and chopped nuts over the top.
Mix vanilla custard and cornflour thoroughly in small saucepan. Heat gently over moderate heat until mixture thickens.  Continue cooking for a few more minutes.
Whisk egg whites until stiff. Gradually add Chelsea Caster Sugar.
Gently stir egg - white mixture into apple puree. Spoon apple mixture over cake base.
Pour custard over the top and decorate with chopped nuts.
