Method

Stew apple slices gently in butter until tender but not brown.
Beat the egg yolks, vanilla and Chelsea White Sugar until light and pale.
Stir in the cake crumbs and apple.
Whisk the egg whites until stiff and fold them into the mixture.
Pour into pudding tin and cover with greased paper and foil and tie securely. Steam for 1 hour. Turn out
