Method
Preheat oven to 180ºC fan bake / 200ºC conventional. Line a 12-hole muffin tin with paper cases.
Core the apples and dice into small pieces (no need to peel them).
In a large bowl, stir flour, sugars, baking powder and 1 teaspoon cinnamon together.
In a separate jug, whisk together eggs, milk, sour cream/yoghurt and vanilla. Add to flour mixture with melted butter and fold in until just combined. Fold in apples, sultanas (if using) and walnuts.
Spoon into prepared muffin tin (filling to the tops). Combine coffee sugar crystals with cinnamon and sprinkle over the muffins.
Bake for 18-22 minutes, or until tops spring back when lightly pressed. Allow to cool for 15 minutes before serving.
