  • 2 Large Brown Onions
  • 5cm Piece Fresh Ginger, peeled and grated
  • 60g Butter
  • 250g Fresh White Breadcrumbs
  • 125g Toasted and Chopped Hazelnuts
  • 1 Large Apple, peeled, cored, and chopped
  • Juice 1 Lemon
  • Grated Rind of ½ Lemon
  • 1 Teaspoon Chelsea Raw Sugar
  • 2 Eggs, lightly beaten
  • Salt and Freshly Ground Black Pepper to taste
  • 2 Tablespoons Chopped Parsley
  • 1 Tablespoon Fresh Oregano, or 1 Teaspoon Dried

Method

Cook onion and ginger gently in butter until tender but not browned.
Pour into a bowl and mix in breadcrumbs, hazelnuts, apple, lemon juice, rind and Chelsea Raw Sugar.
Bind together with beaten eggs and season with salt, pepper, parsley and oregano.
