• 250gm flour
• 1 ½ tsp baking powder

• ¼ tsp salt
• 200ml buttermilk
• 1 ½ tsp vanilla extract
• 125gm soft unsalted butter
• 200gm Chelsea Caster Sugar
• 3 large eggs
• 100gm milk chocolate buttons
• 30gm cocoa
• 150gm frozen raspberries
• 100gm Chelsea Icing Sugar

Buttercream

• 300gm butter
• 700gm Chelsea Icing Sugar, sieved
• 1 tsp vanilla extract
• 2 tbsp milk

Cake

• 1 cup milk
• 1 tbsp lemon juice or vinegar
• 250gm dark chocolate
• 1 cup boiling water
• 1 tsp coffee
• ½ cup oil
• 1 cup Chelsea White Sugar
• 1 tsp vanilla
• 2 eggs
• 2.5 cups flour
• 2 tsp baking soda
• 1 tsp baking powder
• ½ tsp salt

Chocolate Ganache

• 500gm chocolate melts
• 500ml cream

White Chocolate Ganache

• 500gm white chocolate
• 400ml cream

Buttercream Ingredients

• 250gm soft butter
• 1 large bag of Chelsea Icing Sugar
• 3-5 tbsp milk
• Vanilla essence

• 24 whole peeled raw Tiger prawns
• 2 small green chillies, deseeded & roughly chopped
• 2 tablespoons Asian fish sauce
• 5 spring onions, chopped
• grated rind & juice of 2 limes
• 1 x 400g can coconut cream
• ½ teaspoon salt
• 1 teaspoon Chelsea White Sugar

Cake

• ½tsp salt
• 1 ¾ cup Chelsea White Sugar
• 2 eggs at room temp
• ½ cup milk
• ½ cup sour cream
• ½ cup flavourless oil
• 1 tsp vanilla essence
• ½ cup hot black strong coffee
• 200 g melted dark chocolate

Chocolate Ganache

• 1 cup cream
• 400gm dark cooking chocolate, chopped

• 12 plump scallops on the half shell
• 2 tablespoons oil
• 2 – 3 cloves garlic, crushed (1 teaspoon)
• 1 teaspoon crushed fresh ginger
• 4 tablespoons lime juice
• 1 teaspoon Chelsea Caster Sugar
• 1 teaspoon grated lime rind
• 2 tablespoons freshly chopped coriander leaves

Choux Pastry

• 100ml water
• 100ml milk
• 90g butter
• 135g high grade flour
• 200g eggs
• Pinch of salt
• Chelsea Icing Sugar to decorate

Chantilly Cream

• 200ml whipping cream
• 25g Chelsea Icing Sugar
• 1tsp vanilla bean paste

• ¼ cup Chelsea Caster Sugar
• 2 cups boiling water
• juice & grated rind of 4 limes
• 2 tablespoons Asian fish sauce
• 1 small red chilli, deseeded & finely chopped
• 1 tablespoon sweet chilli sauce
• 36 freshly shucked oysters on the half shell
• sprigs of mint to garnish
