Occasion - High Tea

• 3 ½ cups Chelsea White Sugar
• 200g sweetened condensed milk 
• 125g butter
• ½ cup Meadow Fresh Original Milk
• 3 Tbsp Chelsea Golden Syrup (tin)
• ½ tsp salt
• 2 tsp vanilla essence

• 250g butter, softened
• ½ cup Chelsea Icing Sugar
• 1 tsp vanilla essence
• 1 ½ cups Edmonds Standard Grade Flour
• ¾ cup Edmonds Fielder's Cornflour

Filling

• 75g butter, softened
• 1 ¼ cups Chelsea Icing Sugar
• 2 Tbsp Chelsea Maple Flavoured Syrup

• 3 large egg whites, at room temperature
• ¼ cup (60g) Chelsea Caster Sugar
• Few drops pink food colouring
• 1¼ cups (190g) Chelsea Icing Sugar
• 1 cup (120g) ground almonds
• 1 tsp finely grated lemon rind

Raspberry Cream Filling

• ¼ cup (60ml) thickened cream
• 150g white chocolate, coarsely chopped
• 45g frozen raspberries, defrosted and crushed

• 1 cup Edmonds Standard Grade Flour
• ¾ cup Chelsea Organic Coconut Sugar
• 1 tsp cinnamon
• 1 tsp Edmonds Baking Soda
• ½ tsp Edmonds Baking Powder
• ¼ tsp salt
• 1 ½ cups grated carrot
• ⅓ cup sultanas
• ⅔ cup Olivani Olive Oil
• 2 eggs, lightly beaten

Icing

• 110g Meadow Fresh Cream Cheese
• 60g butter, softened
• 2 cups Chelsea Icing Sugar 
• 1 tsp vanilla essence
• Chopped walnuts and edible flowers, to decorate (optional)

PASTRY

• 85g butter, softened
• ½ cup Chelsea Caster Sugar (115g)
• 1 egg
• 1 tsp finely grated lemon zest
• 1 cup Edmonds Standard Grade Flour (150g)
• ¾ cup Edmonds Fielder's Cornflour (115g)
• 1 tsp Edmonds Baking Powder

FILLING

• ¼ cup Edmonds Fielder's Cornflour (38g)
• 1 Tbsp finely grated lemon zest
• ½ cup lemon juice (125ml)
• 4 egg yolks
• 1 cup Chelsea Caster Sugar (225g)
• 1 cup water (250ml)
• 1 Tbsp butter

SWISS MERINGUE TOPPING

• ⅔ cup Chelsea Caster Sugar (150g)
• 4 egg whites
• 1 tsp vanilla extract

• 125g butter, cubed, softened
• ¾ cup Chelsea Caster Sugar (170g)
• 1 tsp vanilla extract
• 1 egg
• 1 ⅓ cups plain flour (200g)
• ⅔ cup rice flour (100g)
• ¼ tsp baking powder

Icing

• 1 ¼ cups Chelsea Icing Sugar (188g)
• 2-3 Tbsp milk
• 70g white chocolate, melted
• 1-2 drops pink food colouring
• 3-4 Tbsp 100s and 1000s sprinkles
