• 600g fine white rice flour

Pavlova

• 6 egg whites (at room temperature)
• 2 cups Chelsea Raw Caster Sugar
• 1 tsp vanilla essence
• 1 tsp white vinegar
• 2 tsp cornflour

Black Doris Plum Drizzle

• 850g can Black Doris Plums in Syrup
• 1 Tbsp Black Doris Plum Jam
• 1 Tbsp Chelsea Blackstrap Molasses
• 1 Tbsp Chelsea Jam Setting Sugar
• Handful freeze-dried cherries or plums, to serve

Mascarpone Cream

• 200g mascarpone
• 200g thick Greek yoghurt
• ½ tsp vanilla bean paste
• Pinch sea salt

BRINE

• 5 tsp salt
• ¼ cup Chelsea Dark Cane Sugar (50g)
• 1 ½ tsp dried thyme
• 1 tsp dried sage
• 1 tsp garlic powder
• 3.75kg whole turkey (or between 3.5-4.5kg), thawed or mostly thawed

ROAST

• 125g butter, softened

• 2 Tbsp fresh thyme + 1 tsp extra
• 2 Tbsp fresh marjoram + 1 tsp extra

• 3.5kg turkey

Sauce

Lamb

• 1 spring onion
• Leaves from 2 large sprigs mint

• Generous pinch of Himalayan sea salt

Cranberry Jam

• 3 cups frozen cranberries, thawed
• 1 cup Chelsea Caster Sugar
• 1 cup water
• 1 tsp grated orange or lemon zest

Red Swirl Meringues kisses

• 1 egg white
• ¼ cup Chelsea Caster Sugar
• 2-3 drops vanilla extract
• Red gel food colour

Candied Rosemary leaves

• 6-7 fresh sprigs of Rosemary
